Lemon Ricotta Pasta & Spinach

Parmesan cheese


Baby spinach


Extra virgin olive oil


Salt and pepper

Italian Seasoning



  • Combine ricotta, parmesan, extra virgin olive oil, butter, garlic, lemon zest, salt, and pepper
  • Mix well, taste…and taste again!  make sure you’re happy with the seasoning
  • Meanwhile, cook your pasta.
  • Reserve some pasta cooking water (no more than 1 cup)
  • Add spinach to the pot, stir until cooked
  • Drain pasta and spinach and return to the pot
  • Add the ricotta sauce, the cooking water, and stir well
  • Want some protein? Add cooked chicken or Shrimp.
  • Serve with olive oil,  freshly grated Parmesan cheese, and or lemon wedges.
