Easy Baked Jambalaya

An easy twist to a Cajun classic. Bake it!

Easy Baked Jambalaya is one of those elusive recipes that is both delicious and easy – a rare combination. And no one ever believes how easy it is because it is so delicious! Everyone will think you spent hours in the kitchen slaving away over a hot stove, when really all you did was chop a few things up and throw it in the oven! It is the perfect dish for entertaining. It is plenty of food for everyone, meanwhile it is easy, quick prep, then you throw it in the oven and have plenty of time to get ready for the party!

INGREDIENTS

1 stick of butter (melted)

8 oz. can of tomato sauce

1 can of Beef Broth

1 can of French Onion Soup

2 cups of parboiled rice

1 lb. Andouille sausage

1 ½ lbs. chicken

3 cloves of garlic (minced)

1 green bell pepper

1 onion

1/3 cup fresh parsley

2 bay leaves

1 teaspoon of thyme

Salt & Pepper (to taste)

Tony’s Creole Seasoning (to taste)

DIRECTIONS

Preheat the oven to 300° F. Melt the butter in a double boiler. While the butter is melting, chop up the parsley, pepper, and onion. Slice the sausage into coins and cut the chicken up into bite sized pieces. Mix all ingredients together in a large mixing bowl. Transfer to a well-greased, 13 x 9 baking dish, cover with foil, and bake for 2 hours. Increase the oven temperature to 325° F, remove the jambalaya from the oven, remove the foil, and bake for an additional 30 minutes. Enjoy!
