Healthy Banana Chocolate pancake recipe

I don’t know about you all but I love breakfast foods especially pancakes! I know generally pancakes are not made with the healthiest of ingredients but with this recipe, they can be. Pancakes have been around since the 5th-century BC days made by Ancient Greeks. Pancakes are so popular that they have a National Pancake Day on Sept. 26th. The pancake, hotcake, griddlecake, flapjack, whatever you want to call it, is an enjoyable food worldwide. Here is a simple recipe for healthy banana and chocolate pancakes.

  • 1/2 banana (sliced)
  • 1/4 cup of mini dark chocolate chips or bar (melted)
  • 1 egg
  • 1 tsp. coconut oil
  • 1/3 cup oats
  • 1 tsp. honey
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 3 small strawberries for topping (optional)
  • 2 tbsp. chopped pecans for topping (optional)

First, you want to get a medium sized skillet and grease with coconut oil. Set the heat on the stove to low-medium heat so you have time to make your pancake batter and not burn the oil in the skillet.

In a medium bowl, mix the dry ingredients which are the oats, baking powder, cinnamon, and banana. Add the dark chocolate chips (melted in the microwave for 30-45 secs.), egg, coconut oil, and honey. Stir all ingredients real good until the mixture is combined well.

Then, you will scoop about 1/4 cup of the mixture and put into your skillet. You will cook each side of the pancake for about 1 to 2 minutes each on both sides or until mixture is cooked through. After cooked on each side, plate the pancake and garnish with sliced strawberries and chopped pecans.

There you have it! A healthy banana and chocolate pancake! Hope you enjoy!
