How to make loaded cauliflower bake

Take cauliflower to the next level.

Loaded Cauliflower Bake is a fun and easy dish to make that puts a cheesy, bacony spin on a vegetable that, in my opinion, can only benefit from a cheesy, bacony spin.

Loaded Cauliflower Bake


Two small heads of cauliflower, cut into florets

Two tablespoons of butter

Three cloves of garlic, minced

Three tablespoons of all-purpose flour

Two cups of whole milk

Two ounces of cream cheese, softened

One and a half cup of shredded cheddar

Salt & pepper

10 slices of cooked bacon, crumbled

One-fourth cup of sliced green onions


  1. Preheat oven to 350 degrees. Blanch cauliflower for three minutes in large pot of salted boiling water. Using colander, drain cauliflower of water.
  2. To make the cheese sauce begin by melting the butter in a large skillet on medium heat. Then, add the garlic and cook for about 1 minute. Next, add flour and stir for 2 minutes, until a nice golden. Then, add the milk and bring to a low simmer, next add the cream cheese and whisk until combined. Remove skillet from heat, mix in one cup of cheddar until melted. Next, season with salt and pepper to your taste.
  3. Add the cauliflower to a 9″ x 13″ baking dish. Next, pour the cheese sauce over cauliflower and stir. Next, top with all but one tablespoon each of the crumbled bacon and green onions and stir together. Then, top with remaining green onions, bacon and cheddar.
  4. This dish needs 30 minutes to bake. The cauliflower will be tender and cheese will be melted. Enjoy!
