Here are some great, quick and easy recipes using locally grown green leafy veggies!

Well if your wondering what green vegetables to eat, well look no further. We asked farmers at the Greens on the Red Festival what they like. Here’s a few easy green recipes and some simple step by step instructions on how to make a variety of green vegetables dishes.

Chopped Spinach Salad INGREDIENTS

Balsamic Vinegar

Olive Oil

Bleu Cheese

Red Onions


Start with combining olive oil and red onions in small mixing bowl, stir together all the ingredients.

There are multiple methods used to cook Chopped Spinach Salad. You can saute it in a pan or steam, Cook for 15 minutes. Simple, all you need is a pan and a pair of cooking utensils.

Wash and dry the spinach, then proceed to add spinach to a bowl.


Green Onions



Daikon Radish

Green Chile Powder


Cut up bok choy and combine green onions. Toss in rest of the ingredients.

Easy Cabbage Cool Slaw INGREDIENTS

Large head cabbage

Green Bell Pepper




Vegetable Oil

Pure Cane Sugar


Start by combining cabbage, bell pepper, onion and carrot. Then add vinegar, oil and sugar. Coat the salad with dressing and mix. Cover, then refrigerate for at least 6 to 8 hours.

Fruit and Nut Lettuce Salad INGREDIENTS

Romaine lettuce

Mandarin oranges

Seedless red grapes


Vegetable oil

3 tablespoons sugar

Lemon Juice

Lemon peel

Salt and pepper


Grab a large bowl. Put romaine, oranges, grapes and almonds in the large bowl. Add vegetable oil, 3 table spoons of sugar, salt and pepper to the small bowl. Then, pour contents over salad and stir.
