Some easy and super fast additions can turn ordinary cornbread into a festive side dish.
Take ordinary cornbread to a higher level with these Cranberry Mint Cornbread recipe. For the winter and Christmas holidays, adding three extra ingredients to your favorite cornbread mix for a special treat. Feel free to use your favorite cornbread recipe.
- 1 box Jiffy cornbread mix
- 1/3 c. milk
- 1 egg
- 1/4 c. cranberries
- 1 tsp. fresh mint
- 1 1/2 Tbsp. honey
Preheat oven to 400º. Prepare cornbread mix as directed by adding milk and eggs. If you have dried cranberries, place them in a microwave safe bowl then cover with water. Microwave on high for three minutes. Then let the cranberries cool for ten minutes. If you are using fresh cranberries, cut each in half and rinse out the four seeds inside. Roughly chop the mint. Add cranberries, mint and honey and stir together. Fill muffin pan or 8″ x 8″ pan and bake according to directions. Bake for 15 minutes or until golden brown. Let cool a few minutes before serving.
Optional: Add some fresh chopped jalapenos for an extra kick. For more savory cornbread, add basil or oregano instead of the mint.
