One thing that everyone following a low carb or paleo lifestyle seems to crave is BREAD! You can beat those cravings with some cheesy Keto Waffle Bread. Because one of the main ingredients is cheese, this bread is ideal for breakfast style sandwiches like egg and bacon or sausage. It is also great for club style sandwiches and hamburgers.
The recipe double, triples and quadruples well so you can make a bunch of them in advance. Just store them in the fridge and reheat in the microwave when a sandwich craving hits.
Keto Waffle Bread INGREDIENTS
1 c. shredded mozzarella cheese
1 Tbsp. coconut flour
1 tsp. baking powder
Beat egg then add other ingredients and mix thoroughly. Preheat waffle iron then hit it with a coat of cooking spray. Spoon half of the mixture onto waffle iron making sure to cover the entire bottom surface. Close iron and cook for around a minute. Makes 2 mini waffles.
